Ugandan Rolex - Kampala Sanctuary Recipe

Ugandan Rolex is a beloved street food in Uganda that can be found on any street corner. This delicious recipe consists of layered flatbread with eggs and veggies.

CHAPATI

(this can be substituted with a flour tortilla if you don’t want to start from scratch):

INGREDIENTS

  • 2 cup all-purpose flour
  • Water (luke warm temperature)
  • 1 tsp salt
  • Cooking oil
  • Rolling pin and board

DIRECTIONS

  1. Put the flour and salt in a medium sized bowl.
  2. Add in 2 tablespoons of oil to the mixture.
  3. Slowly add in water as you knead the dough until it doesn’t stick to your fingers -the dough must be smooth and just the right softness.
  4. Divide the dough into equal portions, roughly the size of a golf ball. Roll between your palms, applying a gentle pressure until they are smooth with no cracks.
  5. Sprinkle flour over the rolling board where you will be rolling the Chapati’s out. Use your rolling pin to push the dough into round flat circles, about 5 inches wide. Flip the dough as you roll and make sure you add flour if it is sticking to the board or the rolling pin.
  6. In a pan on medium heat put one tablespoon of oil in the pan. Put the rolled out Chapati in to cook. Use your hands to stretch the Chapati to the width of the pan so that the chapatti is as thin as possible. Take either a spatula or an empty flour bag and fold it down from the top to the bottom. Slowly press down on the Chapati as you turn it.
  7. The Chapati is ready for its first flip when you begin to see raised bumps on its surface. Use a spatula to turn it on to its other side. Remove from the pan when both sides appear golden in color.

ROLEX

INGREDIENTS

  • 2-5 eggs, depending on how many you want
  • Pinch of salt
  • Small handful of shredded cabbage
  • 3-5 thin slices of tomato
  • 3-5 thin onion rings
  • Cooking oil

DIRECTIONS

  1. Break the eggs into a cup or small bowl, add pinch of salt and beat with a fork (you can mix veggies into eggs or wait until the end).
  2. Heat frying pan under medium/high heat and add cooking oil.
  3. Pour beaten eggs into the pan in a thin circle.
  4. Use a large spoon to keep eggs flat and cook until the bottom is browned. Flip once, cook until the eggs are ready to your desire.
  5. Place the Chapati/tortilla wrap on top of the eggs.
  6. Warm together for about 10 seconds.
  7. Remove and set aside.
  8. At the center of it, add some cabbage, onion rings and slices of tomato.
  9. Sprinkle some salt over toppings and roll it up.
  10. Enjoy!
