Chilaquiles Rojos - Tijuana Sanctuary Recipe

Chilaquiles Rojos is a popular traditional Mexican breakfast made with crispy tortillas smothered in a tomato based red chile sauce. Serve with eggs and your choice of cheese and enjoy!


  • Tortillas
  • Onion, chopped
  • Tomato, chopped
  • Guajillo pepper
  • Garlic
  • Water
  • Cooking oil


  1. Cut the tortillas into triangles for tortilla chips.
  2. Heat oil in a skillet over medium/high heat.
  3. Immediately add tortilla pieces and wait for them to brown. When brown, remove from the oil and place on paper towels to drain.
  4. For the sauce, add the chopped tomato, onion, garlic and chili into a blender with a little water and blend together.
  5. Place the fried tortillas back in the skillet along with the blended red sauce
  6. Add salt to taste, mix all together.
  7. Enjoy with cheese, eggs, cream or beans.
